QUESOS ARTESANOS LETUX (HOMEMADE CHEESE)

A series of coincidences and a married couple with enthusiasm and an entrepreneurial spirit formed a perfect cocktail, whose result was a project that opened its doors in 2004. These are the Quesos Artesanos de Letux.

A traditional dairy in a region with very little cheese-making tradition, but with the expertise typical of those who experienced it as part of their deep-rooted culture.

The final flavours that the Letux homemade cheese transmits in mouth are the result of a whole production process, starting with the selection of the raw material. Goat and sheep milk is the most important ingredient in the preparation of these cheeses and a lot of attention is given to their origin.

The goat milk comes from Fuendetodos, from one of the few free-range stock-breeding farms in Aragon. There the animals are fed with cereals and aromatic plants that invade the hills around Fuendetodos, transmitting to the milk, and later to the cheese, flavours of rosemary, hay, dried fruit, etc.

The sheep milk is transported from Arandiga, where they get the milk from free-range “Rasa Aragonesa” sheep, and with the same conditions as the goats cheese.

Each cheese is prepared according to traditional methods, without the addition of any type of preserving agent, paraffin or fatty acids that coat the cheese during its maturing process and avoid the formation of mould. Thus, the Letux homemade cheese, once pressed and drained, rests and matures, forming layers of mould on the outside which will provide the cheese with a characteristic flavour. Once they are ready for consumption, the layer of mould is removed by hand.

Their wide range of products includes some that have received awards: Mature sheep and goat cheese, and others that arouse the customer's curiosity: The Quitapenas, a paste prepared with old, aged shredded cheese, which eau-de-vie is added to; and curd cheese, that is complicated to prepare, with its intense flavour and unctuous texture.

These cheeses are marketed at the main fairs all over Aragon. Online sale means that they also reach cities such as Madrid, Barcelona, etc, demanded by gourmet shops and select restaurants.

Today, Quesos Artesanos de Letux is researching into new product lines such as cream cheese, yoghurts or junkets, but always with maximum commitment to quality right from the start, as well as during its preparation and sale.
